This recipe is packed with the nutritional benefits of eating raw herbs as well as the the many health benefits of Spinach. It is low in fat and even lower in cholesterol,  high in niacin and zinc, as well as protein, fibre,vitamins A, C, E and K, thiamin, vitamin B6, folate,calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. Bascially a multi vitamin on a plate! With the added benefit of tasting great.

Ingredients

20 grams coriander leaves, roughly chopped

20 grams of parsley, roughly chopped

20 grams of basil leaves, torn

20 grams mint leaves, torn

50 grams organic baby spinach  torn

50 grams organic  rocket, torn

One large organic tomato, chopped

Handful of fresh walnuts, crushed

1 medium grated organic courgette, plus 6 or 7 slices to decorate.

Handful of sesame seeds

Handful of pine nuts

Organic Lemon or Lime

Freshly ground sea salt

Method:

Place all the ingredients in a bowl, then squeeze the lemon or lime over the top, add a pinch of sea salt, mix and serve!! It that simple.
